obesity, heart disease, high blood pressure, hypoglycemia, diabetes, elevated
triglycerides, and cholesterol levels and even cancer will decrease. But
where is the evidence? During this period, obesity has increased 25%
with over-third of the American adult population considered overweight by
conservative government definitions. In the same period, childhood
obesity has increased over 40% and about 20% of teenagers are now considered
significantly overweight.
In addition, 90% of those with diabetes are overweight, about one-third of
those with high blood pressure are overweight, and about two-thirds of those
with coronary heart disease are overweight. Cancer mortality increases

weight control is almost non-existent.
DIETARY FAT
Our overall health problems
are not the simple result of the amount of dietary fat we consume. The
situation is complex. Low-fat, high complex carbohydrate diets not only
fail to solve our health problems, they can actually make them worse.
One hundred percent of the calories our diet contains is made up of
carbohydrates, fats and proteins. So as we decrease the percentage of
fats, we necessarily increase the percentage of proteins and carbohydrates.
Unfortunately, most of the foods higher in fat are also our best source of
protein. because of this, and because we have been told to eat complex
carbohydrates, we have wound up with a diet lower in fat, yes, but also lower
in protein and high in carbohydrates.

WHAT ABOUT CHOLESTEROL
Most people have been taught
to think cholesterol is bad. even though most of us don't even know what
it is or how it is used by the body, we are convinced from all bad press that
it is bad for us. Many imagine cholesterol as a kind of fat, floating
around in our bloodstream, ready to kill us at any moment. In fact,
cholesterol is absolutely essential for life.
Cholesterol, in reality, isn't
even fat. It is a white, waxy-type substance required by every cell in
our body to maintain the structural integrity of our cell membranes. It
is also involved in the control of water flow, of allowing nutrients into the
skin and the elimination of waste products.
Our nervous tissue and brain
require lots of cholesterol for normal function, as they are made up of large
quantities of the substance. Cholesterol is what gives our skin the
ability to shed water.
Our body must also have
cholesterol as an ingredient for many hormones such as the sex hormones,
estrogen, and testosterone, and you body's natural steroids, produced in our
adrenal glands. Cholesterol in the bile aids in the digestion of fatty
foods and helps us absorb fat-soluble vitamins A, D, E and K from food.
Every cell in our body can make cholesterol. In fact, only about 20
percent of the cholesterol in our bloodstream originates in our diet - our
bodies make the other 80 percent. Obviously, simply cutting back on
dietary cholesterol won't help much to improve cholesterol levels in our
blood.
Interestingly, insulin
stimulates our cells to manufacture cholesterol, making it unnecessary for the
cell to retrieve any from the bloodstream. This thereby allows excess
cholesterol to build up in the blood. With a diet that reduces insulin

muscle tissue, which provides our strength and ability to move around.
Our most important organ of all, the
heart, is made up of muscles. therefore, it is very important we eat
adequate amounts of protein. This is a major reason why the

Most people need at least 70
grams of protein, and many need more than 100 grams, each day. In terms

insulin. Most also know it is associated with diabetes. They know
insulin is responsible for controlling glucose (sugar) metabolism. what
most people don't realize, though, is that insulin actually effects every cell
in our bodies. Insulin controls the storage of body fat as well as the
availability of fatty acids and amino acids to all of our cells.
It is
involved in appetite control, fluid retention and the manufacture of
